Tindora, also known as Ivy Gourd or Tindoori, is a small, green, slender vegetable popular in Indian and Southeast Asian cooking. It has a mildly tangy taste and a crisp texture, making it ideal for stir-fries, curries, and pickles. Available year-round, Tindora is especially fresh during the peak seasons of May–June and September–October. It is rich in fiber and nutrients, and when stored in the refrigerator at 10–12°C, it stays fresh for up to 7–10 days.
